“Pig Pie”
Mary Lou’s “Pig Pie”
Note: Mary Lou is my friend, Jen’s mom. When Jen was younger, Mary Lou made a new recipe to take to their friends, the Berry’s house for dessert. When one of the kids asked, “What kind of pie is this?” Mary Lou said “It is a new recipe and we’re the guinea pigs.” Since then, they’ve referred to it as “Pig Pie”.
“Pig Pie” (Buttermilk Lemon Pie)
Taken to Berry’s 01-02-1977
Pastry lined pie pan
Combine: 2 cups sugar
3 tablespoons flour
Add: ½ cup melted butter and beat until creamy
Stir in: 3 eggs, lightly beaten
1 cup buttermilk
Juice and rind of one lemon
1 teaspoon vanilla
Bake: 400 degree oven for 10 minutes
Reduce to 325 degrees and bake for 30 minutes or until set
