Sandy’s Peas and Pasta
Sandy enjoyed this recipe, made by her beloved Nunnie, throughout her life. She loves it even more today because when she makes it, everyone in her family tells her that it tastes exactly like Nunnie’s. That makes Sandy feel good, mind and body. It certainly should make her feel good. Everything Nunnie cooked was extraordinary.
Sandy’s Peas and Pasta
4 Tablespoons olive oil
1 large onion, diced
1 28 ounce can tomato puree
2 ½ cans water (8 ¾ cups)
1 can peas with juice
1/3 cup grated Romano cheese
1 pound shell or ditalini pasta
Salt and pepper to taste
Brown onion in oil
Add puree and water
Season with salt and pepper
Cook 15 minutes
Add peas with juice
Season with half of the Romano cheese
Cook another 15 – 20 minutes
Cook pasta and add to pot with tomato and pea mixture
Sprinkle with remaining cheese
