Beth’s Blue Cheese, Apples and Walnut Salad
Beth is a neighbor and dear friend of mine. She has prepared lunch for me almost every Friday since my husband died over five years ago. We enjoy delicious food, accentuated with a bottle (or two!) of red wine. I call her the “Salad Queen” because she makes the BEST salads. This is one of my favorites.
Beth’s Blue Cheese, Apples and Walnut Salad
Salad
6 cups mixed salad greens
1 large apple, chopped (about 1 cup)
2 tablespoons chopped red onion
3 tablespoons crumbled blue cheese
2 tablespoons chopped walnuts, toasted
Place all ingredients in a salad bowl.
Dressing
¼ cup olive oil
2 tablespoons lemon juice
Salt and pepper to taste
Whisk all four ingredients together in a small bowl. Pour over salad and toss to combine.
